
New regulations for central kitchen operations in Saudi Arabia have been released by the Ministry of Municipalities and Housing. A qualified food safety specialist had to be present in the central kitchen facility, according to the updated rules.
In addition to the implementation of exact professional mechanisms for waste management, the requirements also include the installation of surveillance cameras covering work areas, the adoption of dependable electronic payment systems, and the provision of special facilities for workers, such as restrooms, dress changing rooms, and toilets.
Advanced technical and operational controls are also required, such as the provision of standards-compliant ventilation, cooling, and water drainage systems; an interior design that considers worker movement and avoids cross-contamination; and routine inspections of areas used for preparation, storage, and serving to guarantee the highest standards of hygiene and food safety, especially for high-risk foods.
As part of its efforts to improve food safety, increase operational effectiveness, modernize the regulatory framework for food activities, and establish an alluring investment climate that fosters economic expansion, the ministry has introduced new regulations.
